I think unless Biden dies or becomes completely incapacitated, it's pretty much a lock that he's the Dem nominee. They're not thrilled about it, but there's no formal challenger at the moment, and we're actually coming very near the primary voting season. If there was a serious movement to unseat Biden within the Democratic Party, it would have already started.
That's why the odds are so long (+2200), and in fact they should be longer than that, because Newsom has a better chance of taking over if Biden goes down.
It's going to be Trump vs Biden again. Many refuse to believe it or can't accept it, but that's the reality. Dems aren't going to nominate someone else over the sitting President, and Trump has too much of a hold on the GOP to lose the nomination.

And how is Biden just going to "stop running" at this point, 10 months before the election? So even if Trump had a heart attack today and died, I doubt Biden would drop out. He'd probably come back with some kind of nonsense that "DeSantis is just as bad as Trump", and therefore he has to stay in the race.

I know why he's in the race. He changed the script as soon as he took office. Originally the plan was for him to be the "stable alternative" to Trump, restore supposed normalcy to the country, and then pass the torch to a young progressive after one term.

However, after being somewhat enabled by the impatient progressive left, he ended up abandoning his longtime moderate roots and tried to become a transformational figure.
Unfortunately, this all failed, and now he's wildly unpopular with all but some diehard Dems. The final kick in the ass has been the Hamas situation, where now he's also lost the progressives for being too pro-Israel.
If Biden walks away now, he will be seen as a failed Jimmy Carter type figure -- minus the good heart and earnest desire to truly do good. He'll walk out being seen as both shifty and incompetent.
He wants another term to try to get things done and revise his legacy. The better question is why the Dems let him do it without challenge. I think it's because nobody viable was willing to step up and take him on. Newsom, the slickest of slick politicians, has decided to unquestionably praise Biden, keep in the good graces of the party, and then become the 2028 nominee. He doesn't want to take the injury right now of attempting to unseat a sitting President in his own party.
